What was the inspiration behind your Pineapple Chicken Malvani Curry recipe? 

I grew up in Mumbai, India and the state where I come from is Maharashtra. Malvani Masala is a popular spice mix used in this region. The masala uses over a dozen fresh, roasted spices which adds to the irresistible aroma and tantalizing flavor in the dish. Maharashtra is also amongst the top states in India that grows pineapple abundantly because of it’s climate.

The culinary preferences and easy availability of the ingredients back home (now also available in most parts of the world) prompted me to create this flavorful dish.

Malvani Masala has a luxurious spicy taste, combined with the sweet and tangy kick from the pineapple. To bring out the chicken’s flavours, I added coconut milk. It’s a match made in heaven. Back home, it is easy to buy the malvani masala off the shelf, but since I got my Thermomix®, I always choose to make all my masalas with fresh ingredients.

Whenever I crave to go back to my roots, I take advantage of cooking this dish for my family and serve it with Steamed Rice. It is a comfort food that I swear by.

Share your special tip + trick for your Pineapple Passion recipe.

Allow the roasted spices to cool down completely before grinding into a powder; which will allow the spice mix powder to achieve it’s smooth consistency. I usually prefer to make small batches of the spice powder which I can use 2 -3 times more, just to make sure the aroma and flavours are retained.

If time permits, marinate the chicken at least one hour prior to cooking so the flavors can penetrate into the meat. For a vegetarian/ vegan option, add cauliflower, carrot, beans, peas instead of chicken.

What is your creative process when creating a recipe? 

Growing up, I always saw my mother and sister cook and everything they would make would be absolutely delicious, somehow, they became my inspiration and I also feel I inherited the skill. I always like to try new things.

Since I got my Thermomix®, my cooking has gone to a whole new level. I am no longer making boring, repetitive meals, thanks to the thousands of recipes on Cookidoo®. Also, I don’t ever waste food anymore, if I have some ingredient left I simply turn to Cookidoo® for recipes and voila, I will have a new dish prepared for my family.

What is your favorite thing about being a Thermomix® Independent Consultant?

The other day someone told me when you talk about cooking and Thermomix®, your face lights up. My husband tells me “Food is my love language.” Being able to share my passion for cooking and all the dishes that Thermomix® helps me make for everyone around me is so fulfilling.

On what occasions do you recommend users prepare this recipe for?

This is a very versatile dish and can be prepared and served when you are entertaining guests or simply want to enjoy a sumptuous Indian meal with your family.

Have you brought your Thermomix® with you on any of your travels? If so, where?

When we were living in Dubai, we would take the Thermomix® to our staycations over the weekend. When we moved to Canada, the one thing I made sure boarded the plane along with my family was my Thermomix®.

What was the inspiration behind your Summer breeze pineapple pound cake recipe? 

Summer is finally here and we all need food that can be served at room temperature. So I thought about pound cakes that do not need refrigeration. It's easy to make and delicious; a great snack or breakfast.

Since I found out there are not many pound cake recipes on Cookidoo®, I decided to add pineapples into my pound cake recipe. I believe coconut and pineapple are the perfect match, so I added some shredded coconut in the recipe to enhance the flavour. My Summer breeze pineapple pound cake recipe is based on the classic pound cake. Pineapple chuncks added some sour and fresh flavour and the shredded coconut gives it a summer taste. Overall, it's a good treat for families.

Her tip: If using chilled butter, cut into pieces and mix 30 sec/speed 4.

What is your favorite thing about being a Thermomix® Independent Consultant?

It's so much fun sharing amazing recipes with my friends and guests. I love hearing that they enjoyed the recipes,  especially for those customers who were not into cooking before. I am touched when my customers make good meals with Thermomix®.

On what occasions do you recommend users prepare this recipe for?

I recommend making this recipe on any occasion, especially for breakfast or a snack. You will only use simple and basic ingredients; and the loaf mix will be done within minutes in your Thermomix®, plus baking time.

Have you brought your Thermomix® with you on any of your travels?

I just went to a RV trip with my TM6®. We went to Nanaimo for 4 days. I used Thermomix® for cooking beef, boiling eggs and making dumplings for my kids. We also enjoyed fresh watermelon juice made by Thermomix®.

What was the inspiration behind your Caramel Sous-vide Pineapple recipe? 

I am originally from Taiwan, well known for its tropical fruits, which set the foundation to create my pineapple recipe. I grew up eating pineapple all the time; although I enjoyed it, every time I ate it it’d leave me a scratch tongue feeling. The day I discovered how to use the sous-vide method with the Thermomix®. everything changed! I discovered a way of cooking pineapple that stays juicy. Thanks to the sous-vide technique, I discovered many new flavors of pineapples and eating them mindfully.

 

What is your favourite thing about being a Thermomix® Independent Consultant? 

I always wanted to combine my passion for cooking with business opportunities. Being an Independent Consultant helps me to achieve my goals. I joined a like-minded community that shares my passion and made many new friends.

On what occasions do you recommend users prepare this recipe for?

I love to accompany my sous vide pineapple with a sorbet ice cream. This recipe is perfect for any occasion, specially during summertime as a refreshing dessert!

Before the pandemic, I brought my Thermomix® with me on family road trips across the East Coast of both Canada and USA.

What was the inspiration behind your Aloha Carrot Cake recipe?

I wanted to support a need by busy families in helping them create quick, healthy, and delicious recipes.

What is your creative process when creating a recipe?

I love turning my family’s favourite recipes into recipes, it’s such an honour to have now two of my recipes featured on Cookidoo®. My tip is to adapt your favourite family recipes using and adjusting the order of ingredients and methods of Time/Temp/Speed.  I used a food processor back in the early 80’s and was inspired by a cookbook circa 1978 it was very similar to our basic cookbook.

What is your favorite thing about being a Thermomix® Independent Consultant? 

I love being part of a supportive community and have opportunities to grow our business and share our passion for Thermomix®.

On what occasions do you recommend users prepare this recipe for? 

This cake is a great take along for a picnic, potluck, office and it freezes well for a lunchbox treat.

What is your go-to recipe for the Summer? 

This summer it is all about using the Varoma and multi-layer steaming. My favourite summer recipe is the Caulifower Potatoe Salad.

Originally from South Italy, Rita is a proud mother of two girls. She met the Thermomix® back home. “My mom, my two sister in-law own their own Thermomix but they call them Bimby (I really love this nick name). In Canada, I looked hard to find my Bimby… until I found out it was called Thermomix®! Finally I GOT MY BIMBY! And that’s when my career stared with Thermomix® Canada!,” says Rita.

 

What was the inspiration behind your Gold Pineapple Te Fiti recipe?

When I was invited to submit my entry to the Pineapple Passion recipe contest, it was a flash in my mind. The pineapple goes well with many drinks and meals. I was inspired to create the Gold Pineapple Te Fiti after going to Maui, where I enjoyed this drink on the sunny beachside of Hawaii.

Share your special tip + trick for your Pineapple Passion recipe.

I recommend using a fresh ripe pineapple. To bring a pleasant decorative presentation, before pouring the Gold Pineapple Te Fiti into glasses; to rub a lime around the rim of each glass and dip rims into a plate of coloured sugar… I used Blue and Pink!

Other tips:

  • Garnish each glass with a slice of pineapple, lime and fresh mint.
  • Thin to desired consistency with additional rum and/or coconut milk.

 

What is your creative process when creating a recipe?

I owned a fine dinning restaurant and had many years of experience as a bar tender and cook. My inspiration lies on my passion for entertaining friends and family.

What is your favorite thing about being a Thermomix® Independent Consultant?

I love to be part of the Thermomix® family, as an Independent Consultant, because it's fun and I have the chance to connect and share my experience with a lot of people, and different cultures.

On what occasions do you recommend users prepare this recipe for?

It’s a perfect refreshing summer drink for any occasion.

What is your go-to recipe for the Summer?

Not one in particular, because I love trying new recipes and discovering new ingredients, but for summertime, definitely a mix of fish - using the Varoma function - and the amazing “Risotto con gamberi e fiori di zucca al profumo di Tartufo” Fiori di zucca hare available.

I take it with me to our cottage house, and prior to COVID to many householders to host an in-person Cooking Experience. When I am able to travel again, I will definitely take the Thermomix® with me.
